Chicken and Broccoli Pasta

Let’s face it.  Life is busy.  We are busy.  Sometimes dinner doesn’t get started until 6:00 or later.  We run kids, we have jobs, life happens.  But I get tired of eating out.  I like a home cooked meal, even if it is a throw together.

That happened tonight.  Kids have gymnastics, kids have soccer, car is in the shop, lots of juggling.   So, I did what any other mom can do.  I threw together a filling, delicious meal, in about 15 minutes.  Yes, I did.

We happened to have some leftover rotisserie chicken, the Costco one.  Gluten free.

So, I put together some pasta, some chicken, some broccoli, and some Progresso cream of mushroom soup, top it with some cheese, and Voila!  I have to tell you though, the gluten free pasta makes or breaks your meal, so choose carefully.

This is our favorite brand of pasta.  It’s rice.  It is not mushy.  It tastes like “real” pasta.

Chicken and Broccoli Pasta
 
Ingredients
  • 1 Package spiral pasta
  • 2 cups shredded chicken (rotisserie is what I used)
  • 2 cans cream of mushroom soup (Progresso is cheap and gluten free)
  • 2 cups cooked broccoli, not mushy
  • cheddar cheese
Instructions
  1. Boil your pasta until tender, do not over cook.
  2. Shred your chicken, cook it first if you need to.
  3. Steam your broccoli.
  4. Mix all of the above and add your 2 cans of soup. Pour into a 9x13 pan. Top with cheese and heat it in the oven for about 15 minutes on 350 degrees.

Gluten Free Cornbread

Can you feel it?  Fall, it’s finally in the air!  This is one of our favorites around my house- gluten free cornbread.  What a treat!

Very quick and easy to whip up and great with fall stews and soups!

Gluten Free Cornbread

Ingredients
  • 1 cup cornmeal
  • 1 cup Pamela's pancake and baking mix
  • ½ cup sugar
  • 3½ t. baking powder
  • ¼ t. salt
  • 1 cup milk
  • ¼ cup canola oil
  • 2 eggs
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 400 degrees
  2. Grease 8 inch square baking pan
  3. Combine all ingredients in a bowl and mix well.
  4. Pour into pan
  5. Bake about 20 to 25 min.
Notes
In place of Pamela's mix, you can also use my all purpose gluten free flour mix on the blog, or any other all purpose gluten free flour mix should do.

Gluten Free Donut Holes

This picture doesn’t do these little holes any justice!  These are so delicious!  You must try!  They are very easy to make and will be sure to please your kids and big kids too!  If you are from one of those families whose kids or husband or wife won’t eat gluten free, just slip them one of these and don’t tell them they are gluten free, they’ll never know!

Gluten Free Donut Holes

Ingredients
  • 1 cup gluten free flour mix
  • ½ cup Kinnikinnick pancake/waffle mix
  • ½ cup sugar
  • ¼ cup cornstarch
  • 2 tsp. xanthan gum
  • 2 tsp. baking powder
  • ¼ tsp. cinnamon
  • ¼ tsp. salt
  • 3 eggs
  • ½ cup milk
Instructions
  1. Sift all dry ingredients together (this is very important, I tried them without sifting and the donuts don't turn out the same).
  2. Add milk and eggs, mix well. You can refrigerate to make the dough a little more stiff, but I am always in a hurry and just move to the next step
  3. Drop teaspoonful amount into hot oil and cook for about 2-3 min. on each side. You don't want them to cook too quickly otherwise the dough will not cook in the center. The donuts flip all by themselves when they are finished.
  4. Immediately roll in powdered sugar or cinnamon sugar if you prefer. I think the powdered sugar sticks better to the donuts.
  5. Enjoy!
Notes
These are great leftover as well. Just refrigerate. Remove when ready and warm on microwave safe plate 30 seconds and enjoy!

 

Squash Casserole Recipe

This is one of our favorite recipes we always used to make with fresh squash.  I have just found that instead of using the saltine crackers like the recipe calls for, I can use Glutino Gluten Free Original Crackers.  It turned out great!  I think you will enjoy!

This works with frozen squash, but best with fresh squash.

Ingredients
  • 2 cups cooked squash
  • 1 med. onion, cooked with squash
  • 1 Tbsp. sugar
  • 8-10 gluten free crackers, crushed
  • 2 eggs, beaten
  • 1 cup milk
  • ½ stick butter, melted
  • Salt and pepper to taste
Instructions
  1. Mix all ingredients
  2. Pour into casserole dish
  3. Bake at 350 degrees until set and slightly browned.

Gluten Free Angel Food Cake in the Oven…

My kitchen smells delicious with this gluten free angel food cake in my oven!

It it tastes as good as it looks, we are in business!!   Lol!

Check back later for more pictures and the recipe.  I just love angel food cake.  It is so expensive to buy a box mix.  I spent less than $2.50 on this recipe!
