So, lately I have been spending a lot of time on Pinterest. During the day I have been spending a lot of time on the phone and emails in preparation for the Gluten Free Expo, that at night, I just want to surf.
If you haven't started Pinterest, not sure whether to encourage you to or not. It is so addicting! These cheese crackers are some that I found on Pinterest. The recipe is not gluten free. So I changed the flour and voila! Gluten Free Cheese Crackers!
Ingredients:
1 1/2 cups grated extra sharp cheddar cheese
4 T. unsalted butter, softened and cut into pieces
3/4 cup gluten free all purpose flour mix (I used the same flour mix that I used for the gluten free croissants)
1/2 tsp. salt
1/2 tsp. crushed red pepper flakes
1T. milk (I added a little more, but start with this and add more if needed 1 T. at a time).
Directions:
Preheat oven to 350 degrees
Put everything except milk in the food processor and pulse 5-10 seconds at a time until it becomes coarse crumbs
Add the milk and continue to process until the dough clumjps in a ball
Roll the dough out on lightly floured suface. Try to roll into a rectangle shape (makes it easier to cut)
Cut into 1 inch squares. I used a pizza cutter. Then put a small hole in the center of the square with the dull end of a skewer
Place the crackers 1/4 inch apart on parchment paper on a cookie sheet
Bake for 12-15 min. until a little crispy around the edges
Let them cool and then eat them! We had some left for the next day and they were not as crispy then, so I wouldn't recommend making to keep for a week or 2. Just make what you would like to eat. They really do taste like Cheez-Its! My daughter said, "Is this really what Cheez-Its taste like?" It has been so long since she has had one.
**note, these were a tad spicy with the crushed red pepper flakes. If you wanted to use a little less, or just some red pepper instead, it may not be as spicy.
