Chicken and Broccoli Pasta

Let’s face it.  Life is busy.  We are busy.  Sometimes dinner doesn’t get started until 6:00 or later.  We run kids, we have jobs, life happens.  But I get tired of eating out.  I like a home cooked meal, even if it is a throw together.

That happened tonight.  Kids have gymnastics, kids have soccer, car is in the shop, lots of juggling.   So, I did what any other mom can do.  I threw together a filling, delicious meal, in about 15 minutes.  Yes, I did.

We happened to have some leftover rotisserie chicken, the Costco one.  Gluten free.

So, I put together some pasta, some chicken, some broccoli, and some Progresso cream of mushroom soup, top it with some cheese, and Voila!  I have to tell you though, the gluten free pasta makes or breaks your meal, so choose carefully.

This is our favorite brand of pasta.  It’s rice.  It is not mushy.  It tastes like “real” pasta.

Here is the recipe: super easy, enjoy!

Chicken and Broccoli Pasta
 
Ingredients
  • 1 Package spiral pasta
  • 2 cups shredded chicken (rotisserie is what I used)
  • 2 cans cream of mushroom soup (Progresso is cheap and gluten free)
  • 2 cups cooked broccoli, not mushy
  • cheddar cheese
Instructions
  1. Boil your pasta until tender, do not over cook.
  2. Shred your chicken, cook it first if you need to.
  3. Steam your broccoli.
  4. Mix all of the above and add your 2 cans of soup. Pour into a 9x13 pan. Top with cheese and heat it in the oven for about 15 minutes on 350 degrees.

New Recipe-Sloppy Joes

One of my favorite meals growing up was sloppy joes.  My mom would brown the meat and add the can of sauce.  I like to make things from scratch when I can.  I feel like it is better for you without all the added preservatives and such.

I am currently on a mission to find meals that I can make quickly because of our busy schedule.  I am pretty sure we will add this to our favorites.  It was super easy to make and it was a hit!

We like to use Udi’s gluten free buns.  Our favorite way to eat them is to toast them on the grill.  They get a little crispy on the outside but warm and soft on the inside.  Yummo!  If you don’t do the bread, you could certainly put this on a bed of lettuce or in a leaf of lettuce to eat like a lettuce wrap.

Serves: 8
Ingredients
  • 1½ pounds ground beef
  • ¼ cup onion
  • 1 can tomato sauce
  • 1T brown sugar
  • 1T Worstershire Sauce
  • 1 tsp. minced garlic
  • ¼ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Brown meat, garlic, and onion together until cooked thoroughly.
  2. Add sauce, sugar, Worstershire Sauce, salt, and pepper.
  3. Let simmer for 15 min. on low.
  4. Serve on gluten free buns or on lettuce.

productConvenience….it is a beautiful thing.  Gluten free is not always easy.  This summer has proved so as we travel and celebrate birthdays of friends and have summer get togethers.  So I love these mixes because they make my life easier.  🙂  I love that I can go into the grocery store and purchase a mix to make gluten free treats for my family to enjoy.  I love that I don't always have to make brownies or cakes and cookies from scratch.  I am so thankful to the companies who take the time to develop these products for us!

The Funky Muffin Bakery will be providing gluten free cupcakes for the kids to decorate.  If you haven't heard, The Funky Muffin Bakery is new in town!  They are an ALL gluten free facility.  They were set to open in May, but with a few hiccups in construction, are hoping to open in June!    These cupcakes are not dairy free, they are gluten free and peanut free though!   For those of you dairy free also, please still come, we will have a special treat from Indie Candy for you! 

Indie Candy will be providing some fun fixins for the cupcakes!  Indie Candy is a completely allergen free candy!  No wheat, no nuts, no dairy, no eggs, no treenuts, no shellfish, no soy!  We hope you can bring your kids to enjoy the yummy treats and you can socialize with other parents who are dealing with the same things you are!

Alabama Pediatric Gastroenterology is Closing

This week I received a letter from Alabama Pediatric Gastroenterology group.  My daughter sees Dr. Cavendar here.  I received news that Dr. Cavendar is relocating to the University of Tennessee Health Science Center in Memphis, TN in May of 2013.  Sad news is that this practice will be closing their doors at the end of April.  They give other options for Pediatric Gastroenterology Care:
