Yo’ Mama’s Gluten Free

My husband is in sales, so is always getting to eat out at different places.  He is always looking for some great gluten free places to take us to.  This one he gets to eat at a lot since it is close to his work.  He takes clients here pretty regularly.

We got to experience Yo’ Mama’s for the first time this week.  It was over the top delicious.  My kids could eat fried anything they wanted….fish, shrimp, french fries, or chicken, they also had shrimp and grits.   One had a hamburger with a gluten free bun, one had a waffle with fried chicken, one had fried shrimp and broccoli, and one had fried chicken and french fries.   Oh my goodness!  So yummy!

The whole restaurant is not gluten free, you can get regular buns and regular waffles, but they take extreme care to be sure your food remains gluten free.

It’s that time of year again, my friends – The Annual 5K and Fun Run to help raise celiac disease and gluten intolerance awareness! Run, walk, skip, or dance with us to the finish line – where a great gluten free brunch will be ready to devour! Gluten Free Baked Donuts

I know I haven't been around for a while, but we made these donuts this morning and I just had to share! They are absolutely wonderful! We are always looking to try new things especially for breakfast. I need QUICK and EASY and GOOD. It is hard to find recipes that meet all 3 criteria especially when you are baking from scratch!  They were truely a hit!  I made one batch just to try them (made 6 donuts) and the kids BEGGED me to double the batch and make more, so we did…..thought we would share 🙂

Here are the ingredients:

1 cup gluten free all purpose flour

3 Tbsp coconut sugar (can use regular sugar)

3 Tbsp brown sugar

1 tsp. baking powder

1 tsp. ground cinnamon

1/2 tsp. salt

2 Tbsp. buttermilk

1/4 cup unsweetened applesauce

1 large egg

1/2-1 tsp. vanilla extract

1 Tbsp. unsalted butter, melted

Vanilla Glaze:

1/2 cup confectioner's sugar

1/2 tsp. vanilla extract

2 tsp. milk

Directions:

Add all dry ingredients in a bowl and mix well.  Then add wet ingredients.  Stir until combined well.  Pour batter into a donut pan filling 2/3 the way.  Bake at 350 degrees for about 10 minutes.  Let cool.

Once cooled, mix together ingredients for vanilla glaze.  Dip top of donut in glaze and allow to set.  Repeat.

The Funky Muffin Bakery will be providing gluten free cupcakes for the kids to decorate.  If you haven't heard, The Funky Muffin Bakery is new in town!  They are an ALL gluten free facility.  They were set to open in May, but with a few hiccups in construction, are hoping to open in June!    These cupcakes are not dairy free, they are gluten free and peanut free though!   For those of you dairy free also, please still come, we will have a special treat from Indie Candy for you! 

Indie Candy will be providing some fun fixins for the cupcakes!  Indie Candy is a completely allergen free candy!  No wheat, no nuts, no dairy, no eggs, no treenuts, no shellfish, no soy!  We hope you can bring your kids to enjoy the yummy treats and you can socialize with other parents who are dealing with the same things you are!

Race Entry Fees:

5K/Run/Walk (ages 13 and up): $30 (until April 26) $35 (April 27 until race day)

Picnic and Vendor Fair: $10/per person.  Lunch will include hamburger or hot dog with Udi's buns, side, drink, and dessert. This option will also get you into the vendor fair.

Alabama Pediatric Gastroenterology is Closing

This week I received a letter from Alabama Pediatric Gastroenterology group.  My daughter sees Dr. Cavendar here.  I received news that Dr. Cavendar is relocating to the University of Tennessee Health Science Center in Memphis, TN in May of 2013.  Sad news is that this practice will be closing their doors at the end of April.  They give other options for Pediatric Gastroenterology Care:

If your child is a patient here I would recommend calling their office and having records transferred to your pediatrician's office until you find a new gastro office.  This practice will be seeing patients through April so if you need an appointment, don't delay!  You can call them at 205-933-5744.  If you wait to have your records transferred later, you will be able to find them through Dr. King's new practice in Gardendale, AL.
