Gluten Free Baked Donuts

I know I haven't been around for a while, but we made these donuts this morning and I just had to share! They are absolutely wonderful! We are always looking to try new things especially for breakfast. I need QUICK and EASY and GOOD. It is hard to find recipes that meet all 3 criteria especially when you are baking from scratch!  They were truely a hit!  I made one batch just to try them (made 6 donuts) and the kids BEGGED me to double the batch and make more, so we did…..thought we would share 🙂

Here are the ingredients:

1 cup gluten free all purpose flour

3 Tbsp coconut sugar (can use regular sugar)

3 Tbsp brown sugar

1 tsp. baking powder

1 tsp. ground cinnamon

1/2 tsp. salt

2 Tbsp. buttermilk

1/4 cup unsweetened applesauce

1 large egg

1/2-1 tsp. vanilla extract

1 Tbsp. unsalted butter, melted

Vanilla Glaze:

1/2 cup confectioner's sugar

1/2 tsp. vanilla extract

2 tsp. milk

Directions:

Add all dry ingredients in a bowl and mix well.  Then add wet ingredients.  Stir until combined well.  Pour batter into a donut pan filling 2/3 the way.  Bake at 350 degrees for about 10 minutes.  Let cool.

Once cooled, mix together ingredients for vanilla glaze.  Dip top of donut in glaze and allow to set.  Repeat.

Sweet Treats at Sweet Freedom

Here is a place called Sweet Freedom in Philadelphia, PA we tried out for a gluten free snack.  It is an all gluten free bakery.  A little on the expensive side.  Four treats cost me over $15!!  I had promised the kids a cupcake and wanted to try an all gluten free bakery since we don’t get anything like that in Birmingham.  I didn’t know each cupcake would cost $3.50 each!  They were very good.  2 kids tried cookies with icing in the middle and 2 had cupcakes.  I sure wish we had an all gluten free bakery in Birmingham.  Anyone up to starting one?  It was so fun to watch my daughter get to pick anything from the bakery case that she wanted!  It is a rare thing for her and definately worth the $15.

Dreamcakes in Homewood Gluten Free
