Squash Casserole Recipe

This is one of our favorite recipes we always used to make with fresh squash.  I have just found that instead of using the saltine crackers like the recipe calls for, I can use Glutino Gluten Free Original Crackers.  It turned out great!  I think you will enjoy!

This works with frozen squash, but best with fresh squash.
Recipe type: side dish
Serves: 4-6
  • 2 cups cooked squash
  • 1 med. onion, cooked with squash
  • 1 Tbsp. sugar
  • 8-10 gluten free crackers, crushed
  • 2 eggs, beaten
  • 1 cup milk
  • ½ stick butter, melted
  • Salt and pepper to taste
  1. Mix all ingredients
  2. Pour into casserole dish
  3. Bake at 350 degrees until set and slightly browned.
