This is one of our favorite recipes we always used to make with fresh squash. I have just found that instead of using the saltine crackers like the recipe calls for, I can use Glutino Gluten Free Original Crackers. It turned out great! I think you will enjoy!

This works with frozen squash, but best with fresh squash.
Ingredients
- 2 cups cooked squash
- 1 med. onion, cooked with squash
- 1 Tbsp. sugar
- 8-10 gluten free crackers, crushed
- 2 eggs, beaten
- 1 cup milk
- 1/2 stick butter, melted
- Salt and pepper to taste
Instructions
- Mix all ingredients
- Pour into casserole dish
- Bake at 350 degrees until set and slightly browned.
