Minty Chocolate Truffles

My sister in law makes a version of these made from Oreos around the holidays and we all just love them!  Thought I would come up with a gluten free version for all to enjoy!

3 Simple Ingredients

1 pkg. Glutino sandwich cookies

1 cup Andes Baking Chips

2/3 cup cream cheese, softened

Crumble cookies until fine consistancy

Add the cream cheese and mix well

Scoop out into round balls.  I used a teaspoon size which with a whole package of Glutino cookies would make about 48 truffles.  Place them on wax paper and freeze for 30 min. to an hour.

Melt 1 cup of Andes Baking Chips and drop each frozen cookie drop into the melted chocolate.  Remove with a fork and let harden on wax paper.  If you would like, you can use sprinkles on top (apply immediately)

Store in airtight container in the refrigerator up to 2 weeks.  Or you can freeze up to 6 months.
