This is a recipe I had posted from my other blog, Savingucents this summer
I have a lot of squash and zucchini from the garden to use. It is so much better fresh! So I have been shopping for recipes and I found one that I must share! It is a spinoff of 5 Dollar Dinner’s Summer Squash Quesadillas.
Ingredients: I didn’t measure ingredients, I am really bad about that, so season to taste
my family doesn’t like peppers or onions, so I left those out of the mixture when I made it and topped my quesadilla with the onions and peppers
6-8 Grilled squash brushed with olive oil and sprinkled with garlic salt
1 grilled red pepper
1 grilled green pepper
1 onion grilled
6-8 ripe roma tomatoes
fresh parsley
salt
Italian seasoning grinder from Mccormics
3 cheese medley or mexican cheese (about 2 cups)
gluten free tortillas
This is the kind of gluten free tortillas we like to use
To Do:
Start grilling the vegetables on the grill (hubby can do this part)
combine chopped tomatoes, parsley,cheese and seasonings in a bowl
once grilled veggies are done, add to bowl other ingredients mix well
start filling the tortillas with the mixture
put out on grill for 5 min on each side or until slightly crispy and melted together well.
