Gluten Free Vendors at Moss Rock Festival in Hoover

Hello friends!  Yes, I am still here, just taking a little longer on a break than I thought I would.  I wanted to give you a heads up on a festival going on this weekend. 

Moss Rock Festival will be this weekend, November 3rd and 4th.  It is held at The Preserve in Hoover AL.  There will be shuttles from Regions Park to The Preserve.  You can visit their event website and get all the information you need. 

This year they are having a gluten free area where there will be a handful of great gluten free vendors!  You can find participating vendors here, but I don't believe they are all listed because you will also find Rudi's Gluten Free Bakery in addition to this list.  If you are out, be sure to stop by to get some great samples and purchase their products! 

The festival will be held on Saturday from 10-5 and Sunday from 10-4.  Hope you have a great time!

Taking a SHORT Break

You have probably noticed that lately, all summer, :) , my posts have been few and far between.  I don't know why, but I always think summer is going to be easiest for blogging, but it always ends up harder.  During the school year, while I am teaching my children, I can get them onto doing some work, blog quickly, and back to them.  Summer, they require my constant attention!

During the summer, as you know, I have 4 children, and our activities keep us hopping!  My homeschooled children are far from unsocialized!  We have been involved in VBS, soccer camps, gymnastics (20 hours a week, all summer), zoo camp, playdates with friends, vacation, swimming, summer reading clubs,  art camp, and plenty more to come!  Not to mention, one of my children in vision therapy twice a week, and the littlest getting her tonsils and adenoids out this past week.  Whew!  Now you know that I am not just choosing to ignore you, I literally am having a very tough time getting my kids everywhere, laundry done, grocery shopping done, the house kept up, working as a nurse, and blogging.  Some things have to give, and for now, it has to be the blog.

Don't be too sad though, I will be back.  I have to take some time to do school planning for next year, finish buying our curriculums, and doing some lesson plans. We start back  the 1st week of August!  Crazy that it is only a month away! 

As time allows, you may find some changes to the blog as I try to add some recipes, and content to the blog.  You just won't find daily posts on a regular basis.  If I come across something totally fantastic, I will be sure to let you know! 

I hope to work with the local stores to get their help on getting the gluten free deals to you!  As well as some other ideas and stories I have brewing for the blog! 

If you have any gluten free content you would like to see added on a regular basis, please let me know.  I am going to be more organized and put together a blogging plan, so feel free to let me know if there are specifics you would like to see!

For gluten free companies, I am looking for filling up my ad space as well, so if you are interested in this, please contact me! 

I will continue to post some fun things on Facebook as I see fun and interesting things you may like, so with that, Facebook is acting crazy with the newest release they have had.  They want bloggers to pay to promote their posts.  If you would like Gluten Free Birmingham to show up in your newsfeed, you have to like my posts often, or comment often, or go to my page, go to the liked button, hover over it, and choose show in newsfeed.  If you don't do this, you may not be able to see anything I post.

Gluten Free Meltaway Cookies

These are so good!  So light and buttery tasting!  I was inspired by a pinterest post I found, but used my gluten free flour blend to make it a gluten free success!  These are sodium free, egg free, and could be made dairy free as well!

To make the cookies:

1 cup unsalted butter (2 sticks)

3/4 cup confectioners sugar

3/4 cup cornstarch

1 cup gluten free flour

Cream together the first 3 ingredients.  Add the flour and continue to mix well.   Drop the cookie dough by the teaspoonful on a cookie sheet and bake at 350 for 10-12 minutes.  Let them cool completely before removing from the cookie sheet.  These are delicate cookies and will crumble if not handled carefully.

Once cooled completely, you can eat plain, or add some icing. 

We added some icing.  We (me and my oldest) experimented some.  This is what we came up with and loved it!

Lemon icing:

Lemon zest of 1 lemon

1 cup of confectioners sugar

Juice from the lemon approx. 1-2 Tbsp.

Mix together but start with the 1 Tbsp. of lemon juice 1st, you can always add more.  You want the icing to be a consistancy that you can drizzle over the cookies.  Once to this consisitancy, do just that…drizzle the icing over the cookies.  Let the icing set, then enjoy!

Nutella Fudgesicles

Nutella is one of our favorite things around here.  We love smearing it on toast or crackers, dipping our fruit in it, and now, making fudgesicles!  These are so easy and fun to do.  We experimented for the first time today with this.  This is what we did:

1 cup 2% milk

1/3 cup Nutella

Whisk together until well blended.  Pour into popsicle holders.  This amount made 5 popsicles, but it depends on how big and how many popsicle holders you have.  You can easily double, or triple this recipe!  Hope you enjoy it as much as we did!
