For Easter we did something a little different, we had brunch instead of a large lunch or dinner. It was so yummy! I had to bring breakfast casserole, gluten free blueberry muffins, fruit and sausage. I just threw the breakfast casserole together without a recipe which is rare for me. I can cook, just give me a recipe. I am scared to try something from scratch because if it is bad, we will just waste it. Gluten free eating is expensive and waste is not good. Anyways, the casserole turned out so good so I wanted to share the recipe:
Breakfast Casserole
1 lb ground sausage cooked
8 oz Mexican cheese
1- 24 oz package of hash browns
12 eggs
1 can Rotel (do not drain)
1 cup milk
8 oz. sour cream
1 tsp salt
1/4 tsp pepper
3 Tablespoons Gluten Free Flour
For non gluten free, just use regular flour
Mix all ingredients well. Pour into greased pan (I used a 15×10) You could use 2 8×8 pans
Bake at 375 degrees 40-50 min until bubbly and edges are browning
